Grandma O’s Peanut Butter Bars

I was invited to a girls’ night last week and I wanted to bring a special treat. I always remember going to Grandma O’s house as a young child and having these delicious peanut butter bars. Grandma O always had the bars and oatmeal cookies (which you can find the recipe for the cookies here) readily available for her grandchildren and great-grandchildren. They really were a special treat for us kids. I wanted to share that little bit of my childhood with my new friends. So, I made Grandma O’s peanut butter bars for them. Why not try making them for your next gathering?

Warning: these bars are so delicious that they might cause weight gain if you can’t control yourself! You have been warned! 🙂

Grandma O's Peanut Butter Bars

  1. 1 cup brown sugar (packed)
  2. 1/2 cup butter (softened)
  3. 1/2 cup coconut oil (softened)
  4. 1 tsp baking soda
  5. 2 cups unbleached white flour
  6. 1/2 cup peanut butter (crunchy adds a nice texture)
  7. 1 cup oatmeal
  1. 1 cup powdered sugar
  2. 2 T cocoa
  3. 2 T milk
  4. 1 tsp vanilla
  5. 1 T butter (melted)
  1. Mix all ingredients for the bars except oatmeal.
  2. Add oatmeal and knead like a pastry crust.
  3. Pat into 9x13 inch cake pan.
  4. Bake at 350*F for 20 minutes.
  5. Mix powdered sugar, cocoa and milk.
  6. Add vanilla and butter.
  7. Pour over the bars when done in the oven, but while they are still warm.
