During the milking season, we quite often have an abundance of goat milk. We do drink the milk, but we also make a lot of cheese with it. I usually save up the milk and then spend a day making several batches of cheese which are frozen for later.
The type of cheese that I make is a mozzarella style farmer’s cheese. It is quick and easy to make and yet still produces a delicious end product that we use on everything! The entire process only takes about 20 minutes and makes one pound of cheese from one gallon of milk.
